Dinner Menu For The Week of September 30th to October 6th

First off, how did it become October already?!?!?! Also, why are we still in the 80s?! What weird weather but the weird thing is why do I think its weird as it always seems to be like this! ANYWAYS! I used to post a menu every week and it usually helped me keep track and know what we were going to eat. I fell out of that habit and OF COURSE then screwed it all up then because I didn't have a clue what I was going to make and then would use that as an excuse to go out to eat. Well, for that reason I am starting a weekly menu again!!!! I will be at a conference Friday and Saturday so I will leave them to do what they want, otherwise here is what we are planning on dinner for this week!!



Monday: Waffles and Bacon

Tuesday: Stuffed Shells

Wednesday: Chicken Roll Ups

Thursday: BBQ pork sandwiches

Friday: On their own!

Saturday: Southwest Soup

Sunday: Spaghetti

Any Interest In Freezer Meals Recipes/How Tos?

So, I have been doing Freezer Meals. I made about 20 meals this last time. They are so easy to do and then during the week I just have to make sure I put what I want in the fridge the night before, then pop it in the oven and about an hour later, we have a wonderful cooked meal.

My question is, is there any interest from anyone for me to show you and tell you the recipes that I make? I am planning on another freezer meal day soon so I could take more detailed pictures and post recipes as I go along so that you would be able to make them yourself. If I get enough feedback, I will definitely make sure to document and share! Thanks!



Homemade Philly Cheese Steak Sandwiches

So, my hubby and I tried this awesome Philly sandwich at a meeting and we both really liked it. Issue? It was in the frozen section and about $15! So, we decided instead that we would spend that money to make our own from scratch. Better for us as we know all the ingredients that went into it and knew they were fresh and just so good and so hard to not keep eating!

Ingredients You Need:
Arm Steak
Green Peppers
Onions
French Loaf
Butter
Pepperjack Cheese Slices

First, when you buy your Arm Steak, you can hand it to the meat/deli clerk and ask them to cut it as thin sliced as they can.

As it is cooking, the hubby cut and chopped it up even more. Of course, he had fun doing this!


Then he cut up the green peppers we got from the farmer's market.
Then I took the French Loaf bread.......
And I cut it in half. Then I buttered both sides....YUM!
At that time, the meat was about done..........

So the hubby put the meat in a bowl so that he could put the peppers and onions on the grill.

When they were grilled up to his liking, he toasted the bread, then put the HUGE sandwich together!




Let me tell you, it was AMAZING! We made a huge mess everywhere but it was worth it! Not something we will make to eat very often because it was a bit expensive, but for a splurge every once in a while, it is definitely worth it! We ate this for dinner and the next 2-3 lunches! 

DIY Lanterns

I don't remember where I saw it (probably on pinterest!) but I saw these neat lanterns that had holiday themes inside of them. I thought that was sooooooooooooooooooooooooooooo awesome! I put it in the back of my mind until I could find some lanterns. Well, Target had their summer clearance and I found these two beauties for $4.48 each :) 

 Now, of course they are a spring/summer pink, but nothing a few coats of paint wont get rid of. You can tell its not really meant to be painted on because it chips a bit easy but if my kids would leave them alone it would last a bit longer! I also didn't mess with painting the inside but I'm thinking if I get more time I might redo them to look better. The other thought is to change the colors to go with the holiday, too but that would take a lot of time that I just don't have either!

 I am very proud of them and so happy they turned out so well! I think I want my mantel up to put them on to make it look even better than just the DVD stand! But, that is another day project!
For the "insides" I went to Hobby Lobby and found some neat little fall things on sale 40% off. I mixed and matched them to come up with the combo I liked for each one.

I also went ahead and found some flameless flickering candles to put in them too. Turn off the lights and it looks so beautiful!
So yea, I can see the pink still in this but at the same time, that's the angle...I think! Either way, these are so awesome and I'm excited to think what I can do for each holiday to switch them out now!

An Experiment...

I keep seeing a picture going around on facebook. It says if you write to your favorite Disney characters, they will then send you an autographed 8x10. I have had it saved to do for a while, but never got around to it. This morning, someone had shared it again so I decided today is the DAY! They each picked their own character and we wrote the letter. Now they are in the mailbox, waiting for our wonderful mail man to take them to the post office for us! Hopefully we will get a response back! I'm a bit scared if they do, then they will want to write TONS of letters!! I will definitely update you all if/when they get a reply!

I'm Back!

I took a little break since I had a bad case of pneumonia that REALLY knocked me off my feet! I missed my oldest first day of kindergarten and got out the day my other two got to do their first day of preschool. It's been 3 1/2 weeks since discharge! I'm still tired but getting better! I am hoping to now be able to keep up on my blog posts and have some fun with it once again! My goal for this week is to post at least 5 out of 7 days. This will not include this one so that it makes the goal a bit harder!! :) Hope you all have a great week!
