Well, Its Official!


There's my name in the paper for running for school board! I guess I'm really doing it!

Issues in Reading!

I am enjoying my list of things to do before I'm 30. One goal is to read at least one book a month. I decided this was a good goal since I have so many books laying around but haven't been reading any of them. I picked up Chocolate Chip Cookie Murder by Joanne Fluke. My sister had loaned me these books at least a year ago! It is about a lady who is soon to be 30 (ironic?!?) and is single but happy. She has a cat named Moishe that she rescued and that is all the "man" she needs in her life. She has followed her dream and opened up her store The Cookie Jar. While the town is small, they have lots of mysteries. That is one reason I love the book! It's a nice good mystery! Now for the best part! She talks about different kinds of cookies and things that she makes in her shop. AND in the book, there are recipes!! It seems to be around 5 recipes a book! So far I have tried one recipe. They are called Black and Whites.


They are sooooooooooo yummy! (I apologize for the lack of picture! I had to steal the last one being eaten to get a picture!!!) They are basically like chocolate crinkles but I think they taste even better than any chocolate crinkles I have ever made! I am on the 3rd book in the series right now, and it is really hard not to try and make every recipe I see! The thought of trying to start a book club just so we could make all the recipes has entered my mind way more than once! LOL I will just have to see what I can do!

I am thinking it will be new recipe week! We will see if that continues since I seemed to have caught the crummy cold going around! Pinterest has so many wonderful recipes out there lately!

30 Things To Do Before I'm 30!


I got to thinking, I never got my list going for before I'm 30! I got to thinking of different things and it was weird how hard it was to come up with the whole list. Some are already done, others will be done soon! I am hoping I can complete the whole list before my birthday in September so we will see! Some are easy, some are a bit harder but either way, I should have a nice busy year!

Taco Bowls

Well, tried something different last night! Woohoo! One goal I am keeping with! One other goal we have decided as a family is to not eat out at all for the whole month of January. It's going to be interesting since we seem to eat out a lot more than I like to admit!

So, I decided for dinner we would have taco bowls. My wonderful mom bought me the mold things to make the bowls out of tortilla shells so I decided it would be great to try them. 


 The bowl mold works great! Issue I had is I didn't think they were cooking well enough and too soft. Of course when I took them out they got hard! Next time going to be better now that I know!

I also couldn't find any taco seasoning so I thought what the heck and I made my own!


For the seasoning, I did equal parts of chili powder, garlic powder and onion powder. It was seriously the best taco seasoning I have tasted! So much better for you too!

I decided chicken sounded better than hamburger so shredded up the extra I had from a rotisserie chicken and added 1/2 cup water and some seasoning. It smelled so good! Let it boil then I had it sit to cool off and soak up more flavor.

 

The kids and I then decided all the toppings that should go in it. We chose refried beans, lettuce, corn and mexican cheese. 


We put it all together and it made a great dinner!


We are definitely putting this into our rotation for foods to make for dinner! Do you have any good recipes to try? I'm excited to try some more new ones!

Happy New Year!

It has been a long year for 2012! Lots of ups and downs and whirlwinds of fun and trouble. Now we are in 2013. I don't know what is in store for this year but there are definitely a lot of firsts to come.


I am excited for:

  • My kids being 5, 4, and 3
  • My oldest starting kindergarten
  • My youngest starting preschool
  • Celebrating our 7th wedding anniversary
  • Pirate work party costume party!
  • Turning 30!
My goals for 2013:
  • Be more involved in Head Start
  • Decide on Policy Council or School Board
  • Loose 50lbs or more
  • Do at least 3  5ks!
  • Get more involved in church
  • Do more charity work
  • Be better with our budget
  • Be a better person
  • Make a few new recipes
  • Try something new every month

I hope you all have a great year! I know many things happen and I am ready for what life can bring! I think 2013 is going to be a great year!
